Ingredients
For the salad:
8cupsfresh lettuce greens- I used the spinach/spring mix combo
1/2cupEnglish cucumber- sliced
1/2cupcherry tomatoes- sliced in half
1/4cupred onion- sliced thin
1/4cupkalamata olives
1/2cupgarbanzo beans- rinsed and drained
1/2cupmarinated artichoke hearts- drained
1/2cupfeta cheese
6oz.Jennie-O Smoked Turkey- Sun-Dried Tomato
pita chips- optional
For the Greek Vinaigrette:
3Tablespoonsapple cider vinegar
6Tablespoonsolive oil
1Tablespoonhoney dijon mustard
1teaspoonsugar
1/2teaspoongarlic powder
1teaspoonfresh parsley- finely diced
1/2largelemon - juiced- freshly squeezed
salt and pepper- to taste
Instructions
Arrange all salad ingredients in two large salad bowls. These are main dish salads, so you could also arrange in four smaller bowls for side dish salads.
For the vinaigrette, combine all ingredients in salad shaker. Make sure you use fresh lemon and fresh parsley
Pour salad dressing over salad right before serving.
