Prep the veggies. (You can also skip the veggies if you have picky eaters.) Sauté the onion and peppers in olive oil, with a bit of salt and pepper, over medium heat. When soft, remove to cool.
Prep the crust. Take a cold pie crust (either store bought or homemade), and press into a sprayed pie dish. Slightly crimp the edges, and trim off excess dough.
Prep the eggs: Whip the eggs and half and half together, until well combined.
Assemble. Sprinkle in half of the ham and cheese and half of the veggie mixture. Pour half of the eggs and half and half mixture over top. Repeat with remaining half.
Bake. Preheat oven to 350 degrees. Place the quiche in oven and bake until inside is completely set, approximately 55 minutes. Remove from oven and let it sit for about 5-6 minutes. Serve.
