Ham and Cheese Quiche

Ham and Cheese Quiche combines a flaky crust with a rich and creamy ham and egg mixture. So easy, and a perfect brunch dish!

Ingredients

  • 1 Tablespoon olive oil
  • 1/2 small onion - sliced thin
  • 1/4 large green bell pepper - sliced thin
  • 1/4 large red bell pepper - sliced thin
  • 1 refrigerated pie crust - or homemade pie crust
  • 6 large eggs
  • 1 cup half and half - or heavy cream
  • 1 1/2 cups ham - cubed
  • 1 1/4 cups Cheddar Jack cheese - cubed
  • kosher salt and freshly ground black pepper - to taste

Instructions

  1. Prep the veggies. (You can also skip the veggies if you have picky eaters.) Sauté the onion and peppers in olive oil, with a bit of salt and pepper, over medium heat. When soft, remove to cool.

  2. Prep the crust. Take a cold pie crust (either store bought or homemade), and press into a sprayed pie dish. Slightly crimp the edges, and trim off excess dough.

  3. Prep the eggs: Whip the eggs and half and half together, until well combined.

  4. Assemble. Sprinkle in half of the ham and cheese and half of the veggie mixture. Pour half of the eggs and half and half mixture over top. Repeat with remaining half.

  5. Bake. Preheat oven to 350 degrees. Place the quiche in oven and bake until inside is completely set, approximately 55 minutes. Remove from oven and let it sit for about 5-6 minutes. Serve.

Recipe Notes

  1. For a richer quiche, you can use heavy cream instead of half and half.
  2. If you are into pie crust making, use a homemade crust instead of store-bought.
  3. Substitute different meats for the ham, and different types of cheese instead of Colby jack.
  4. Change up the veggies if so desired.
  5. You can freeze this quiche after it is cooled. Wrap tightly and place in freezer bag.
  6. Once frozen, remove to refrigerator until completely thawed out. Place in 350 oven for approximately 15-20 mites to reheat.
