Cinco de Mayo

For all you history buffs out there, Cinco de Mayo is NOT Mexico’s Independence Day (which is actually September 16). Cinco de Mayo is an American-Mexican holiday, celebrating the David-over-Goliath victory of a rag-tag group of unemployed Americans over the well-organized French forces of Napoleon III. This victory took place at the Battle of Puebla on May 5, 1862, under the leadership of General Ignacio Zaragoza.

We started celebrating this day to educate Mexican Americans about their cultural heritage. But now I think we celebrate as an excuse to indulge in our favorite Mexican food and drink.

Why We Love Margaritas:

SIMPLE TO MAKE – Most of our margaritas are simple and fun to make. The layered fruity margs are a little more time consuming but not too much.
CONTAIN TEQUILA – I’m a tequila girl so I’m always all-in on margaritas! We also use tequila in our Grapefruit Paloma and Sangria Margarita.
FUN PARTY DRINKS – When we’re throwing a party, a margarita is always the perfect party drink. We have LONG summers here in Texas so a chilled marg is nice.

Basic Ingredients for The Best Margaritas:

We’ve got a growing collection of the best margaritas in town and we can’t be stopped! Here are some basics when it comes to making the perfect margarita.

Tequila – Choose a quality silver tequila for your margaritas. There is no need to buy a high-end tequila (that is generally served for sipping on it’s own) but don’t go with a cheap version either.
Cointreau – Many of our recipes use Cointreau but this is not required. It’s a more expensive version of triple sec and gives amazing flavor to margaritas.
Fresh lime juice – One of the most important ingredients for fresh margs is freshly squeezed lime juice. I recommend using large limes to get lots of juice when squeezing.
Sweetener – While you don’t NEED a sweetener, many people prefer using either simple syrup or Agave Nectar in their drinks.
Juice or Fruit – These are often used in some of our fruit-infused blends. We’ve used fresh watermelon juice, frozen pineapples, frozen cherries, etc.
Lots of Ice – Make sure you have plenty of ice on hand when making margaritas. You’ll use in cocktail shakers, blenders, or straight up on the rocks.

Recipe Tips:

Chill your ingredients. If you’re making margaritas, go ahead and measure our the tequila (and Cointreau) and place in the refrigerator or freezer several hours before it’s party time.
Keep extra limes. You’ll be surprised at how many limes you need for margarita making, so I recommend having extra handy.
Make them pretty. We love adding a salt rim and garnishes. I also love using some fun glasses (some are linked below).

Sourdough Bread

Is there anything better than homemade sourdough bread? I think not!

If made correctly, typical sourdough bread has a complex, tangy flavor profile – aka “sour”. Its depth of flavor comes from natural fermentation, which develops over time and varies based on the starter, flour and other ingredients, and the fermentation process used.

If you’ve been following along with me for a while, you may remember that I began my sourdough journey during the 2020 pandemic – when the rest of the world was hunkered down at home doing the same. After I got comfortable with the process, I started creating recipes and sharing with the world – YOU!

Making sourdough is truly a labor of love. You feed your starter every day just like a human being – LOL – (if you’re planning to bake with it soon) and then you’ll be blessed with beautiful loaves of bread. It really is the best tasting bread you’ll ever eat, and it’s super rewarding too.

Our Favorite Sourdough Recipes

The following recipes include our favorite sourdough bread recipes.

Because I’m a spicy gal, our Jalapeño Cheddar Sourdough Bread is probably my favorite one. I toast it, add a slathering of butter, and then top it with slices of cheddar cheese. I know – MORE cheese please!

My hubby prefers our Cinnamon Raisin Sourdough Bread because he favors anything sweet! It makes great French toast too!

Thanksgiving Leftovers are my favorite part of this important feast. Here are 9 Delicious Ways to Use Thanksgiving Leftovers and I know you’ll agree with my statement. BEST part!

Thanksgiving Day Leftovers

I’ve got to admit. The feast on Thanksgiving Day wears me out! There is planning, grocery shopping, table setting, cooking, and baking. And then there is the timing. Making sure everything is ready at the same time and praying that the turkey is perfectly cooked!

But man, the leftovers are a whole other thing. They are the best part of Thanksgiving (and I think they taste better too)! Don’t tell!

Thanksgiving Dinner Reinvented:

SOUP – It’s easy to add turkey or ham to soups – which is my favorite thing to cook in cooler weather. In addition to the two below, try adding turkey to our Lemon Chicken Orzo Soup or ham to Creamy Broccoli Cheddar Soup!
CASSEROLES – Creamy casseroles are a good use of leftovers. Try our Cream of Chicken Soup Substitute in a variety of recipes.
BREAKFAST CASSEROLES – Instead of deli ham, use leftover spiral ham in a variety of casseroles, quiches, or omelets.
SANDWICHES – While I list our Cuban Sandwiches below, you can literally add turkey, dressing, potatoes, and dressing to a sandwich and grill it. SO GOOD!
SALADS – I’m big on green salads and rely on them after the feast of the year. Add turkey or ham to our Grinder Salad, Caesar Salad, or an Italian Chopped Salad.
OTHER – Potato pancakes, grilled ham and cheese, and so on.

Omelette Casserole is a perfect make-ahead breakfast. This casserole is loaded with sausage, bacon, veggies, eggs, and cheese – and feeds a crowd!

Add some ham in place of or in addition to the other meats in this hearty breakfast.

8. Sweet Potato Breakfast Hash

Weekend mode now includes this Sweet Potato Breakfast Skillet. Sautéed sweet potatoes, mushrooms, onions, and jalapeños – all topped with over-easy eggs and sliced avocados. This is my answer to a perfect lazy day brunch!

My Pressed Cuban Sandwiches combine pulled pork roast, deli ham, Swiss cheese, dill pickles, and a zesty mustard aioli – all piled high on crusty bread of your choice. A great sandwich for hungry peeps!

Use leftover ham and turkey in these and leave out the pork!

Today I’m sharing my 15 Best Thanksgiving Side Dishes. From mashed potatoes to Brussels sprouts to salads, I’ve got tons of ideas for the biggest meal of the year!

Thanksgiving Side Dishes

Let’s make this Thanksgiving the tastiest EVER. I suggest getting your family to pitch in to make some side dishes for the best meal of the year.

Thanksgiving Categories:

MAIN DISH – Besides a spiral ham, we love making a Smoked Spatchcock Turkey. Other mains include Smoked Pork Butt Recipe or Smoked Spatchcock Chicken.

POTATOES – You must have both regular mashed potatoes and sweet potatoes. Our favorites are listed below!

VEGGIES – We love a simple green bean dish or something with Brussels sprouts.

SALAD – Making a big salad is a priority for me. I think it’s important to balance out all the buttery, cheesy dishes. Three ideas below!

OTHER – For kids or picky eaters, I usually do Mac and Cheese. We also love corn casserole or something with butternut squash.

TRADITIONAL DISHES (that I don’t always make) – Mom’s stuffing, cranberries, and gravy.

BREAD – Make the bread ahead of time. My suggestions are 1) Chewy French Bread, 2) Homemade Brioche Rolls, 3) Mom’s Dinner Rolls, or 4) something sourdough. I also suggest making the best cornbread recipe or some buttermilk biscuits.

DESSERT – While I’m not a big pie person (on the blog), we enjoy French Silk Pie or my Pumpkin Ice Cream Pie. I also recommend a bundt cake, like Apple Pie Banana Bundt Cake or Pumpkin Streusel Cake. Also, you can NEVER go wrong with homemade ice cream of any kind.

Ingredients Needed to make the Pan-Fried Sea Bass:

Butter/Olive Oil – We like the combo of butter and olive oil when pan frying sea bass.
Lemon Slices – Adding lemon slices to the pan will naturally infuse the fish with lemon flavor. Perfection!
Sea Bass – While there are several types of sea bass, we use Chilean Sea Bass in this recipe. It is known for its rich, buttery flavor and is typically found in the cold waters of the Southern Ocean, including around Antarctica. It is a popular choice in upscale restaurants.
Seasonings – A combination of kosher salt, freshly ground black pepper, garlic powder, and onion powder.

How to Tell When Sea Bass is Done?

While several sources say to cook sea bass to 145 degrees f, I prefer to go with the fork method. I normally pan-fry a few minutes on one side, flip and cook a few minutes on the other side – while periodically testing with a fork. When it flakes easily, immediately remove fish from the heat.

We love using our KitchenAid Attachment to make homemade ice cream anytime we get the craving, so I’m combining all of my KitchenAid Ice Cream Recipes in one post for you to enjoy. Churning your own ice cream is SO easy with this simple attachment, and two quarts are just the right amount.

KitchenAid Ice Cream

All of these recipes use a 2-quart ice cream maker. We have the KitchenAid Attachment but any 2-quart machine works.

If using a smaller ice cream maker, you must adjust recipe quantities. Make sure your machine has enough room for the ice cream to expand as it freezes. If it doesn’t have room, it will stay in liquid form!

What do I need to make homemade ice cream?

KitchenAid 2 Quart Ice Cream Maker – For smaller batches.
If you can’t find the KitchenAid attachment, you can also use a Cuisinart 2-Quart Frozen Ice Cream Maker in its place.
OR use a 4-Quart Electric Ice Cream Maker – for larger batches.
Ice Cream Ingredients – usually dairy, eggs, vanilla, sugar, and other optional items, such as fruit, candy, chocolate, peanut butter, etc. (depending on the kind you choose to make). See above for all the recipes!

Kitchenaid Hand Mixer – I use this hand mixer SO often. Perfect for smaller batch baking.

Cuisinart 14-Cup Food Processor – I upgraded to this food processor when my old won said goodbye. It’s nice for my Peanut Butter Power Balls as well as man other things.
Instant Pot – All the cool kids have an Instant Pot, including ME, thanks to my guys for Christmas a few years ago!
Cosori Air Fryer – I just bought this air fryer and so I haven’t had time to use it. Stay tuned for my review soon!

Le Creuset Cast-Iron French (Dutch) Oven – My family gave this dutch oven a few years ago and I use it almost daily. Lots of soup recipes have been made in this well-loved pot!
All-Clad Stockpot – While this is on the pricier side, it’s 100% worth the investment. Professional grade cookware, and I use it for large batches of soup and stews.
Pre-Seasoned Cast Iron Skillet (12-Inch) – We have a variety of cast iron skillets that we’ve picked up at antique stores/flea markets over the years. I recently purchased THIS one because it’s really large and perfect for certain recipes.

Salmon Patties are a staple protein at our home and we love how easy they are to make! Read on for what to serve with salmon patties, including 15 delicious ideas!

My Grilled Salmon Burger Recipe includes the BEST salmon patties. Use fresh salmon, a tasty blackening seasoning, and some delicious avocado crema to make the BEST burgers ever!

Four parts to the best salmon burgers:

Salmon Patties – An easy combo of fresh salmon, an egg, bread crumbs, and parmesan cheese.
Blackened Seasoning – Make up a large batch of blackened seasoning to use on all the things. This seasoning stays fresh in your pantry for several months.
Avocado Crema – A simple combo of avocado, sour cream, cilantro, garlic salt, and fresh lime juice.
Homemade Buns – Choose your favorite bread recipe and make into burger buns. We love my Everything Bagel Rolls, Whole Wheat Honey Bread, or Brioche Hamburger Buns.

When is salmon done?

Salmon is technically done when it registers 145 degrees on a digital thermometer. However, when I cook it that long, it’s dries out. There is a lot of carry-over cooking with salmon, and I use a fork to see if it’s done. If the salmon flakes easily with a fork, then it’s done.

Which varieties of salmon are available to buy?

There are many types of salmon available to buy in the U.S., including: Atlantic, Chinook, Chum, Coho, Pink, and Sockeye Salmon. All but the Atlantic salmon are harvested from wild fisheries in the Pacific Ocean, while the Atlantic salmon is primarily farm raised.

What is the best type of salmon to eat?

Wild-caught Pacific salmon are typically considered to be the healthiest salmon to eat. Both are fine to eat, but you should understand the differences in how they are raised and decide what is best for you.

According to livestrong.com, wild salmon swim between freshwater and the open ocean, consuming a varied diet of zooplankton and smaller fish. Farmed salmon are raised in pens and fed fishmeal, fish oil, and other protein-rich foods. While both types are rich in omega-3 fatty acids (which are healthy unsaturated fats), farmed varieties typically have larger amounts of unhealthy saturated fats over their counterparts.

We have just recently started to buy Pacific salmon instead of farmed versions, and are surprised to find that they are still very tasty. In fact, we are starting to prefer it.

Today I’m sharing YOUR top 10 recipes of 2020. These are the ones that got the most page views during the year, thanks to google searches, Pinterest, and other traffic drivers.

Part of my blogging gig involves looking at stats throughout the year to see what recipes are getting attention. While I enjoy these ten recipes, there are SO many more that I hope you try as well.

What I’m loving right now:

Scones – For me, it’s a tie between my Maple Nut Scones and my Mini Chocolate Chip Scones. Both go great with a homemade latte, like a pumpkin one or my new favorite eggnog latte!
Pizza is our #1 food here, and we love our pizza parties with the kids. I use my homemade dough and love making both Pesto Tomato Pizza and Taco Pizza, and a white pizza (not shared yet).
Salads – I love making a big salad and eating it all week long. My top three are my Grilled Chicken Cobb Salad, my Italian Chopped Salad, and my Mexican Quinoa Salad.
Soup – As soon as our Texas weather drops out of the 90’s, I start making ALL the soups. There are tons of variety on the blog, but lately I’m loving my Italian Minestrone, Hearty Beef Vegetable, and Sweet Potato Turkey Chili.
Cocktails – If you follow me on Instagram, you know that we love our weekend happy hours. While it’s hard to beat a glass of wine or a craft beer, we love Mai Tais, Apple Cider Margaritas, and a classic Vodka Slush. And of course, a nice charcuterie board.
