Applesauce Cinnamon Muffins

Applesauce Cinnamon Muffins are a healthier muffin, using cinnamon applesauce to add extra moisture and flavor. These also contain two cups of diced apples and a big dash of cinnamon that will make your house smell like fall, and you’ll be coming back for more!

Applesauce Muffins

Fall is my favorite time of year. Cooler weather enabling afternoon bike rides and open windows, the colorful trees and leaves falling, the pumpkins and scarecrows lining neighborhoods, the memories of childhood apple orchard outings, football games and sweatshirt weather, and of course, the wonderful smells coming from my kitchen.

  • Full of texture – In addition to moist, these have plenty of apples mixed in.
  • Sweetened – Brown sugar and cinnamon add the perfect sweet flavor.
  • Healthier – Just under 200 calories makes this an ideal breakfast or anytime treat.

Ingredients needed for Applesauce Cinnamon Muffins:

Simple ingredients that you probably have in your pantry already!

  • Butter – I use unsalted butter, melted and slightly cooled.
  • Brown Sugar – 100% brown sugar for this one!
  • Vanilla – I love the Watkin’s brand.
  • Applesauce – I use sweetened cinnamon applesauce. But you could use an unsweetened version as well.
  • Eggs – Two large eggs.
  • Baking staples – Baking soda, baking powder, salt, and cinnamon.
  • Flour – All-purpose flour works the best for a lighter muffin. You could also experiment with using some whole wheat flour, if desired.
  • Apples – Peel and finely dice your apples. You may want to add a squeeze of lemon to prevent browning.

How to make Applesauce Cinnamon Muffins:

Step 1
Mix wet ingredients. In a mixing bowl, combine the wet ingredients – the melted butter, brown sugar, vanilla, cinnamon applesauce, and eggs.

Step 2
Add in dry ingredients. To the mixing bowl, add the baking soda, baking powder, salt, cinnamon, and all-purpose flour. Stir until just mixed. Don’t over-mix!

Step 3
Prep apples. Peel and core the apples. Dice finely, and then add to the bowl, and gently stir. Reserve a few pieces for the top of the muffins. Add the muffins to the batter and stir to combine.

Step 4
Add batter to muffin tins. To a 12-cup muffin tin, add the liners. Then use a large spoon to add the batter to the liners, filling almost to the top. Add a couple of small apple pieces to the top and an extra sprinkle of cinnamon.

Step 5
Bake. Bake the muffins in a preheated 350 degree oven for 22-24 minutes or until done in the center.

Step 6
Cool. Let the muffins sit in the muffin tins for about five minutes before removing to cooling racks.

Let the muffins cool completely before storing.

Recipe Tips:

  • You can use regular or unsweetened applesauce, instead of cinnamon applesauce.
  • Use your favorite baking apple for this recipe, diced in small pieces.
  • Reserve a couple of pieces of apple pieces top top the muffins – for presentation purposes only.
  • You can try some apple pie spice in place of the cinnamon for a more intense apple flavor.

How to store these muffins:

  • Countertop – You can store them in an airtight container on your counter for about three days.
  • Freezer – These muffins freeze well for up to three months. Wrap them up tight in freezer bags for best results.

Ingredients

  1. I’ve been meaning to leave a comment for awhile now as we have eaten soooo many of these muffins during this past Fall and Winter! My toddler absolutely loves them and my husband and I are usually grabbing them on our way out the door in the morning! Such a tasty (and healthier) Fall treat!!!
