When the weather gets warm, I focus on recipes that are simple to prepare and don’t require an oven. The following six salad recipes fit the bill. They are not only satisfying; they are delicious, colorful, tangy, and healthy!
A recipe re-do that first appeared on my blog in the very early stages. This recipe has some of my favorite ingredients – bacon, eggs, and mushrooms – is very quick to make, and has a wonderful tangy dressing.
My favorite salad creation since starting SueBee Homemaker, this one has protein-packed quinoa, tons of Mexican ingredients, and a delicious Creamy Avocado Dressing to top it off. The fresh corn is a must, and gives the salad a great crunch.

This Cobb Salad is a main course for me. Using leftover grilled chicken, boiled eggs, crispy bacon, avocado, and veggies – it’s a salad that will satisfy even the boys in the fam. The dressing is a great one too, and you can make extra for other salads.
Another protein packed quinoa salad including feta cheese, chick peas, and edamame, this one is also full of healthy vegetables. Just a few shakes of balsamic vinegar is all the flavor it needs.
A super light salad, this Italian Salad features the crispy hearts of palm and a tangy red wine vinaigrette. I love to serve it alongside a big bowl of pasta for a complete meal.
